Did you know that October 15 is National Cheese Curd day? If you live in Wisconsin, you should know what a cheese curd is, but in case you don’t they are the curds from the cheese making process before they are formed into a solid cheese and aged like cheddar. Cheese curds can be plain or flavored and come in natural, white or a golden yellow. They are soft and a bit salty with a rubbery texture. Some of the more common flavored varieties are garlic or Cajun. They are at their best when fresh and “squeaky”. You know they are fresh when you take a bite and hear the characteristic squeak! Best if you eat them the day you buy them, but you can also zap them for a few seconds in the microwave.
